Christmas  Menu

 

To Start

Large Black ham hock and pistachio roulade, spiced apple and cranberry sauce.

  Hot smoked salmon parfait wrapped in Dunkeld smoked salmon and centered with  langoustines, celery and apple slaw. 

 Goats cheese, mulled wine figs and candied Walnut tart, Winter leaves. 

 

The Main Event

Turkey Wellington - A rich puff Pastry Filled with Free Range Turkey, Honey Roast Ham,  Chestnut, Cranberry and Herb Stuffing.

  Roasted Pigeon and Grouse Breasts wrapped in Rare Breed Large Black Bacon and  Wild Mushroom Duxelles.

  Baked Fillet of Sea-bream with Oregano, Lemon and Olive Oil, Warm Potato, Olive,  and Black Olive Salad.

  Poached whole white onion filled with Wee Comrie cheese, Dewar’s whisky soaked raisins,  wheaten bread and clementine crumb

 

The Final

  Traditional Christmas Pudding cantered with marzipan, Dark Matters Rum parfait.

Spiced plum ice cream with poached apricots, berry sauce and Chantilly cream.

  Dark chocolate Tart with pistachio and orange anglaise
