Shepherd's Salad

This fresh Mediterranean salad is the perfect salad dish for any time of the year. The salad gets a wallop of flavour from the garlic and fresh mint and is best served straight after mixing. Crunchy cucumber is one of my favourite ingredients in a salad ­ and this is a great salad recipe when you're bored of lettuce. Again I love versatility in dishes and you can munch on this salad on its own for a healthy lunch with pita bread or serve on the side with your main evening meal alongside some grilled chicken, lamb or fish.

If you want to add variation to the dish, you could also include some crumbled feta cheese to add extra flavour. Shepherds salad is definitely a dish that's both good for you and fills you up.

Preparation Time:
20 minutes
Serves: 4

Ingredients

  • 3 ripe tomatoes, chopped into bite sized cubes
  • 1 cucumber, chopped into bite sized cubes
  • 1 large onion, finely chopped
  • A good handful of flat leaf parsley, coarsely chopped
  • A good handful of fresh mint, coarsely chopped
  • 3 tablespoons olive oil
  • 1 1/2 tablespoons lemon juice
  • 3/4 teaspoon salt
  • 2 cloves garlic crushed
  • Cracked black pepper to taste

    Method

    1. In a salad bowl combine the chopped tomatoes, cucumber, onion, parsley and mint.

    2. In another small bowl whisk together the olive oil, lemon juice, salt and crushed garlic. Pour over the salad and mix together. Crack some black pepper over the top.

    3. Serve immediately.

     Blue skies and fresh salads - it must be April! We may be a little early for the Scottish Tomatoes but you will find some super tasty varieties from our European cousins in Provender Brown and Martins Fruit Bazaar.  Tomatoes all year round are my absolute guilty pleasure - I just can't do without them! 
     
    The addition of fresh mint leaves - an amazing secret ingredient for any salad - and garlic will bring a flavour explosion to your tastebuds and give you a huge tick in your healthy, five a day box.  Ideal when you're getting fit for summer!
