Warm Quinoa Salad Served with Chargrilled Halloumi

Some of you will have seen last week's recipe from Reid's Cafe and I'm delighted to say that I managed to bag an extra dish while I was in shootimg their Thai Noodle Salad. They were serving up this tasty warm Quinoa Salad with Chargrilled Halloumi and it looked so light and healthy I chanced my luck and asked them for it as an extra!

You can’t beat a healthy quinoa salad for a filling lunchtime snack. This superfood is loaded with protein, fibre and minerals and as an added bonus it is naturally gluten free (which Reids excel at!).

Now where is this sunshine so that I can enjoy my summery lunch out in the garden!?

Serves: 2

Ingredients

  • 3 tbsp extra-virgin olive oil
  • 1 small red onion, sliced
  • 1 large roasted pepper from a jar, thickly sliced, or a handful of ready-roasted sliced peppers
  • 200g quinoa
  • 500ml vegetable stock
  • Small bunch flat-leaf parsley, roughly chopped
  • zest and juice 1 lemon
  • large pinch sugar
  • 250g pack halloumi cheese, cut into 6 sliced
    1. Heat 1 tbsp of the oil in a medium saucepan. Cook the onion and pepper for a few mins, then add the quinoa and cook for a further 3 mins. Add the stock, cover and turn the heat down to a simmer. Cook for 15 mins or until soft, then stir through half the parsley. Heat the grill.
    2. Meanwhile, mix the lemon zest and juice with the remaining parsley and oil, and a large pinch of sugar and salt. Grill the halloumi until both sides are golden and crisp. Serve the salad with the grilled halloumi and the dressing poured over everything.

    So my confession as the wordsmith of the outfit is that I cooked quinoa for years all the while pronouncing it entirely wrong! I was all about the kwin-oh-ah and at no point did I ever realise the smiles weren't for my wonderful combinations and fusions of flavours but rather stifled titters at my crazy chat!

    My sister is Coeliac and tells me the recent trend for Gluten Free has come with its ups and its downs. There is far more choice in supermarkets and everything is labelled in a much better manner than it every has been before. But the 'faddy' gang - the dieters and the fussy eaters - have made it tricky for everyone to be taken seriously.

    My thought is this; if you have someone coming for lunch or supper that is Gluten Free then a tasty Quinoa Salad is a great option. One dish that everyone can enjoy, a nice change from pasta and easily teamed with a variety of veg, meats and fish. Although I'm planning the chargrilled Halloumi for my wee sister on her next visit - it looks amazing!
