Thai Prawn and Rice Noodle Salad

As a regular customer and loyal fan of Reids Café, it was a real pleasure to visit this week to find out the recipe for this delicious Thai Prawn & Rice Noodle Salad. I first photographed the mini versions of this dish for their Events and Catering service which specialises in canapés, buffet food and private and corporate functions.

Its a great canapé idea if you’re inviting friends over and want to impress but when their chef Christos told me that it was equally tasty as a lunchtime salad I arranged to come back in order to feature it here!

I’m a lover of Thai food and Reids Café know how to do it well. This Prawn and Rice noodle salad is not only mouthwatering but really healthy and gluten free. (GF folks will know how fantastic Reids is for Gluten Free.)

What I love most is that you can decide to either hone in on your kitchen skills and recreate this dishes yourself or get yourself over to Reids Café and order from the menu. If you’re really lucky the sun will shine and you'll enjoy it outside on the café’s terrace with a glass of wine to help things along!

Preparation Time:

Serves: 4-6

Ingredients

  • 600g prawn flesh, cooked
  • Salad
  • 2 cups strips of peeled cucumber
  • 1 cup basil leaves (Thai basil if you can get)
  • 1 cup coriander leaves
  • 3 tbs spring onions, white part, chopped
  • 2 tbs finely sliced Spanish (red) onion
  • 2 cups tomato flesh in strips
  • 2 cups cooked rice noodles, chopped into bite-sized pieces
  • Dressing
  • 1 tbs sweet soy sauce
  • 1 tbs sweet chilli sauce
  • 2 or 3 crushed garlic cloves
  • 1 tsp grated rind of lime (or lemon)
  • 1 tbs lime juice (or lemon juice)
  • 2 tsp minced ginger (or pickled ginger)
  • 2 or 3 tsp palm sugar (or caster sugar)
  • 1 tbs fish sauce
  • 1 tsp very finely chopped kaffir lime leaves
  • 1/2 tsp white pepper
  • Optional Garnish
  • Extra spring onion
  • Roasted peanuts
  • Deep Fried shallots

    This could be converted to use fish, seafood or other meats. 

    1. Mix salad ingredients.
    2. Mix dressing ingredients and adjust for flavour.
    3. Toss together with the prawns.
    4. Serve sprinkled with spring onions, peanuts and shallots.

    Thai food is one of my favourites and I love, love love a noodle salad.  The Head Chef at Reid's Cafe, Christos, is someone many of you will know and his vast experience across many cuisines is one of the reasons they enjoy such a varied and tasty menu.

    The win win here is that it is so easy to make - we often hear people say they don't have enough time to cook healthy options but I reckon you'd throw this together quicker than the pizza could be delivered!
