Parklands Boutique Hotel with Dining has welcomed back award-winning chef Stuart Black, who returns to them after a hiatus of four years during which he honed his skills in the 3 AA Rosette Elderflower Restaurant in Lymington.
With over ten years of kitchen experience to his name, Stuart is hoping to bring a fresh approach to the Parklands menu with a new kitchen herb garden planned alongside a focus on foraged ingredients.
It’s an exciting time for food in Scotland and Stuart is full of the passion and experience needed to take everything to the next level!
1. Tell us the weirdest / funniest thing that has ever happened to you at work?
There's something every day, honestly! I couldn’t tell you all the stories you will just have to wait for my book...
2. What signals the start of your days off?
Whenever I have time off I will always use it to spend some quality time with my loving partner Chloe and my amazing kids Connor, Lucy, and Julia. Family time is so important and I enjoy every single minute of it. Nothing beats a family day out making memories and having fun.
3. What might people be surprised to know about you?
This is a hard question! I would like to think I had loads of things to say on this but in all honesty there's nothing that surprising about me! I'm just a humble chef who gets a great deal of joy from my day job - what you see is what you get!
There's not one part of my job I could single out as being the best, I just love everything about what I do.
4. What is at the top of your bucket list?
I've always wanted to travel more and explore areas of the world that I've never been to. There's nowhere in specific that I want to visit I would much prefer to see where life takes me.
5. Who or what inspires you?
A fantastic chef I worked with in Lymington at the Elderflower Restaurant - Andrew du Bourg. He had a level of passion, care and ambition that I have never came across before and it really inspired me to push myself and always strive to be the best that I can be.
6. Tell us about the day you’d love to live again?
Holding my kids for the first time and staring endlessly down at them. It is one of those moment in life that are REALLY real and nothing else matters but the moment. It's the best feeling in the world.
7. What’s the best part about your job?
There's not one part of my job I could single out as being the best, I just love everything about what I do.
