Poached Egg over Avocado and Sourdough

This is a simple dish that is both delicious and nutritious. For a while now I have been reducing my meat intake and increasing my plant based diet. Avocados have so many health benefits. Although they get a rap for being high in fat, it is a healthy fat and full of nutrients including vitamin K, folate and vitamin C.

The creamy flavours that emerge from this dish are wonderful from the cream cheese topped with ripe avocados and finished with a poached egg with a runny yoke. Fresh and satisfying for any time of the day but makes for a particularly awesome breakfast.

INGREDIENTS: Fresh local artisan bread and fresh local eggs can be bought at Provender Brown, Loch Leven's Larder, Brig Farm Shop, Glendoick Farm Shop. Avocados at Martin's Fruit Bazzar.

Serves: 1

Ingredients

  • 1 slice of sourdough bread
  • Half an avocado, sliced
  • Handful of chives
  • 1 tbsp Cream Cheese
  • 1 egg, poached
  • Sea salt and pepper

    Method

    1. Start by poaching your egg. Bring a pot of salted water to the boil. Crack an egg into a ramekin then tilt the ramekin into the pot of boiling water for about 4 minutes until the egg is white and the yolk is still tender inside. At the same time toast your slice of sourdough. 
    1. Remove the egg from the pan with a slotted spoon, carefully lifting the egg from underneath and placing onto a paper towel covered plate to soak up any excess water. 
    1. Spread the cream cheese onto the slice of sourdough and arrange the avocado slices on top. Place the poached egg in the centre of the avocado and sprinkle with chopped chives and season to taste.

    We've gone all #fitspo this week with our #AvoToast and I have to confess to loving it! I've been munching avacado on my toast for years before it was trendy - in fact it was back in the days when we were told an avacado had too much fat to be good for you!

    For me, it has to be served with tomato and black pepper but I'm looking at Gill's pics of that runny yolk and I know a whole bunch of you are going to feel inspired into making sure you get that hearty breakfast that the experts keep telling us about.
