Plum and Rhubarb Crumble Cake

My garden plum tree has been bursting with fruit this summer and as I was out collecting, I was inspired to use some fresh from the picking to bake this delightful crumble cake. If you have a plum tree in your garden with lots of fruit on it, this is a great recipe to use them up. 

I love a good crumble and let me tell you – once you’ve tried this you won’t be able to get enough of it! Especially delicious with a dollop of vanilla ice cream or some hot custard or, if you want to be a bit healthier, serve with a few tablespoons of non fat greek yoghurt instead.

Ingredients

  • For the Cake:

  • 175g butter
  • 175g golden caster sugar
  • 3 large eggs
  • 225g self raising flour
  • 1 tsp baking powder
  • 2 tsp vanilla extract
  • 85g soured cream
  • 3 ripe plums, halved and de-stoned
  • 1 stick of rhubarb, cut into chunks

  • For the Crumble:

  • 100g plain flour
  • 50g golden caster sugar
  • 50g butter, chopped into pieces

    Method

    1. Heat the oven to 180C and line a 22cm deep round cake tin with parchment paper.

    2. First make the topping. Put all the crumble ingredients in a bowl and rub together until crumbly.

    3. For the cake, put the butter, sugar, eggs, flour, baking powder, vanilla and soured cream in a big bowl. Beat with an electric whisk until smooth then tip into the tin and level the top. Arrange the plum halves, cut side up and the rhubarb chunks evenly over the mix, then scatter over the crumble.

    4. Bake for 50 mins - 1 hour on a middle shelf until a skewer poked into the cake mixture comes out clean. Cool in the tin for 20 mins then finish cooling on a wire rack. Serve plain or with cream or ice cream.

    Will keep for 3-4 days in an airtight container.
