Our Chef and Patron Paul Newman (member of The Chef Alliance) has an enviable culinary background having led Chef Teams within some of the most prestigious hospitality destinations in the world. Working alongside his family on Errichel Farm, Paul and wife Rebecca rear Rare Breed Shetland Cattle, Large Black Pigs and Shetland Sheep. Founded on a strong ethos of using local and seasonal produce combined with flavours from around the world, Errichel and Thyme (AA Rosetted Restaurant and members of The Slow Food Alliance) are an unforgettable Field to Fork experience.
