Vanilla Orchid Gin Cocktail

This delicious cocktail was one of my favourites in a recent shoot for Daffy's Gin (tough job!).

Passion fruit, Gin and Prosecco make a deliciously fruity combination that goes down a treat while soaking up the summer sun in the garden.  The vanilla gives it a slightly decadent note with mint to liven up your tastebuds and add a flavour of far-off beaches and balmy holiday nights.

The botanicals that Daffy's steep and distill are a combination of the traditional juniper, coriander seeds and cassia bark but with the addition of Lebanese mint to create a classic, complex and perfectly balanced gin.

If you've never tried it, Daffy's can be found in Provender Brown, Perth city's home of great gins.


  • 35ml Daffy's Gin
  • 25ml lemon juice
  • 12.5ml vanilla syrup
  • Half a passion fruit
  • 5 mint leaves
  • 25ml egg white
  • Champagne, Cava or Prosecco


    1. Shake the Daffy's Gin, lemon juice, egg white and vanilla syrup in a cocktail shaker.
    2. Add ice and shake again to cool. 
    3. Strain your cocktail into a long flute glass and top up with fizz poured over the back of a spoon to prevent spilling over.
    4. Garnish with mint leaves and passion fruit.
