Healthy Prawn and Avocado Salad

Ingredients:
- 1 beef tomato
- 1 red onion
- 1 ripe avocado
- 160g jumbo cooked king prawns
- 1 tbsp olive oil
- 1 lime, juiced
- A good pinch of salt and pepper
- A good pinch of garlic granules
- 1 tbsp chopped coriander
Method
1. Chop the tomato, onion and avocado into small chunks and pop into a salad bowl. Add in the king prawns and mix.
2. In a small bowl, whisk the olive oil, lime juice, salt, pepper and garlic granules. Mix in the coriander and pour into the salad bowl.
3. Give everything a good toss through and serve in individual plates with a sprig of coriander.
This vibrant salad is perfect for lunch on the go or as a light main course. With no cooking required, the win win here is that it is so easy to make - we often hear people say they don't have enough time to make healthy meal options but I reckon you'd throw this together quicker than a pizza could be delivered!
Bursting full of flavour and healthy fats and minerals, this is the perfect pick me up at lunchtime, delicious, easy to make and the prep work is minimal.
