Ploughmans Pickle

Ingredients:
- 1 carrot, peeled and diced
- 4 garlic cloves, peeled and finely chopped
- 1 courgette, peeled and diced
- 1 red pepper, de seeded and diced
- 1 onion, peeled and diced
- 1 large apple, peeled and diced
- 180g dark brown sugar
- 1 tbsp lemon juice
- 200ml malt vinegar
- 1 tsp ground allspice
- 1 tsp mustard seeds
- 1 tsp cayenne pepper
- 1 tsp salt
Method
- Combine all the ingredients into one saucepan and bring them to the boil.
- Reduce the heat to a simmer for about 50 mins to 1 hour, stirring often until the mixture becomes thicker and looks like a chutney consistency.
- Transfer to sterilised jars and add salt to season
We've all love a classic ploughmans sarnie but this ploughmans relish is even better! It's chunky, sweet and spicy and the perfect addition to a cheese sarnie or slathered on a hot grilled burger straight from the barbeque. Once you’ve rustled this up, you’ll never buy pickle from the shop again!
