Strawberry & Orange Trifle

A Little Taste of Summer

I’m kicking off #SCBP Recipes with a delicious, mouthwatering Strawberry and Orange Trifle. Perthshire offers some fantastic fruit picking farms and this week I drove my boys out to Mains of Errol to pick up some strawberries from Jamie Arnot's Get Fruity Team.

I absolutely love strawberries. Nothing says summer more to me than the sweet taste of a Perthshire Berry. In my early childhood years, I'd spend summer days with my folks strawberry picking at our local farm. Fruit picking is a whole lot of hard work but so much fun and at the end of the day we’d pack the car, baskets, brimming full of fresh fruit, and head home to prepare lovely summer desserts.

This dessert is so simple to make and its a great choice if you don’t have a lot of time. After our wee drive to collect the strawberries, I made it with my boys and was given a huge thumbs up.

Ingredients

  • 1 punnet of strawberries, halved
  • 1x 298g can mandarin segments
  • 2 tablespoons reserved orange juice
    (from the can of mandarins)
  • 2 tablespoons sugar
  • 300ml whipping cream
  • 8 Scottish shortbread biscuits, crushed
    (I used Deans Shortbread Rounds)
  • Mint sprigs to garnish
    1. Toss together the strawberries, oranges, juice and sugar and leave to stand

    2. Meanwhile, beat the whipping cream with an electric mixer until medium peaks form

    3. Layer the fruit mixture then the cream and then the crushed shortbread into 4 serving dishes - we've used these gorgeous glass sundae bowls

    4. Repeat the layers again and top with the remaining fruit and cream. Cover and chill for at least one hour

    5. Garnish with the mint sprigs

    Who doesn't love strawberries? (If your hand is up go and sit in the corner!). Gill's recipe is a stroke of simple genius and essential summer munching for us lucky Perthshire people. There are so many great fruit farms spread across the county that choosing local and indulging in a little #PerthLoveFest is as easy as... well, making jam!  

    For you perfectionists / fancy pants people, you can use whole oranges, peeled and sliced into segments (why not check out Provender Brown's Fruit Boxes?). And of course, homemade shortbread will make this recipe Dinner Party ready in no time at all.  

    Health nuts can ditch the sugar and swap the cream for natural yoghurt. (But you MUST keep the shortbread otherwise its just breakfast).
