Seafood Crispy Noodles

Hi Everyone!

I hope you all made it into town on Monday to see the spectacular Chinese New Year celebrations. With the banging of drums and a sea of billowing coloured silk, it was a beautiful display of tradition, culture and creativity. I've always found the Chinese Lions and traditional dancing magical. It's like something from a dream or storybook, that captures the charm of the theatre and ignites those wee sparks of your imagination.

I just had to share with you all another AMAZING chinese recipe from the even more amazing Linda Chan. The Jade Garden is iconic in Perth for a traditional Chinese meal and if you haven't been you're missing out majorly so get booked in!

Nicki and I couldn't wait to pop in and see Linda and get her tasty, traditional Chinese recipes.  These seafood noodles were so delicious I'm not embarrassed to admit that there was a small squabble over who got the last juicy, plump scallop!

Preparation Time:
20 minutes
Cooking Time:
15 minutes
Serves: 4

Ingredients

  • 500g egg noodles
  • 5 cloves garlic chopped
  • Knob of ginger grated
  • 4 Tbs Light Soy Sauce
  • 4 Tbs Oyster Sauce
  • 4 Tbs Cornflour
  • 16 shelled and de-veined prawns
  • 8 king scallops
  • 2 Haddock fillets sliced, coated, lightly fried
  • Half a green pepper sliced
  • 1 Red Pepper sliced
  • 100g beansprouts
  • 100g baby corn sliced
  • 100g carrots sliced finely
  • 2 Cups of chicken stock
  • Sesame Oil

    Method

    1. Heat oil in large pan, add the noodles and fry until crispy, then place on paper towel to drain oil and set aside.
    2. Stir fry garlic & ginger, add all the veg and cook briefly
    3. Add soy sauce and oyster sauce
    4. Add all the seafood and cook through
    5. Add chicken stock
    6. Mix corn flour into a paste with some water and stir into pan
    7. Bring to the boil and add a dash of sesame oil and salt to taste
    8. Place noodles on dish and put seafood on top.
