Pimms Lollies

Darling, make these super-duper Pimms ice lollies and you'll forget all about lockdown. Just close your eyes and think of the lovely Andy Murray winning Wimbeldon. 

These Pimm’s lollies are the perfect mix of fruity freshness laced with a good glug of alcohol. They look amazing served in a bucket of ice and will help you cool down in style as that sun shines down on the garden.

Locked-down in a flat? Throw a beach towel over your chair, grab a pair of sunnies and imagine you're in the Algarve. Perfect! 

If this isn't the perfect lockdown treat for a sunny day I don't know what is.

Introduced in 2015, PIMMS STRAWBERRY & MINT SPECIAL EDITION, is Pimm's gin-based No.1 combined with strawberries and a hint of mint. The quintessentially British summer drink, you can also enjot it served over ice, and topped up with twice as much lemonade as Pimm's. Available in most supermarkets.

Ingredients

  • 60 ml Pimms Special Edition Strawberry
  • 250ml Sprite
  • 300g strawberries, sliced
  • 3 baby cucumbers, sliced
  • Handful of fresh mint leaves

    Method

    1.  In a jug mix together the Pimms and Sprite.
    2.  Divide the sliced strawberries, baby cucumbers and mint leaves and push into the lolly moulds.
    3. Top each lolly mould evenly with the Pimms and Sprite mixture then inset sticks. Freeze for a minimum of 4 hours or overnight.
