Courgette Tart

It hardly seems like a year ago that I was picking my courgette crop, and here I am again with my first lot of courgettes of the season from my vegetable patch.

This year, alongside the traditional long green courgettes, I’ve grown round courgettes and the verdict is good – they’re really tasty and filling.

I think over the coming weeks my courgettes will be growing in increasing abundance but they’re such a versatile vegetable and can be sliced, grated or stuffed into an array of dishes.

I’ve opted for a courgette tart this week – handy to keep in the fridge to feed my hungry boys for lunch or a snack during the holidays. I’ve opted for the shortcut and used pre rolled shortcrust pastry as the base to my tart, but if you’ve more time you can make your own.

Serves: 4-6

Ingredients

  • 1 x 320g ready rolled shortcrust pastry
  • 1 red onion
  • 240g streaky bacon, diced
  • 1 garlic clove
  • 2 good sized courgettes sliced
  • 200ml milk
  • 200ml single cream
  • 3 eggs, beaten
  • 3 egg yolks
  • 50g Gruyere cheese, grated
  • 1 tbsp olive oil
    1. Preheat the oven to 200C/400F. Line your tart tin with the shortcrust pastry and prick the base with a fork. Blind bake for approximately 10 minutes then take out of the oven and leave to rest.
    2. Fry the onion in the olive oil until softened and then stir in the diced bacon and garlic and fry for 5 minutes until the bacon is cooked through but not browned.  Add the courgette and fry for a further 5 minutes.
    3. Mix together the milk, cream, beaten eggs and yolks. Pass the mixture through a sieve to remove eggy threads.
    4. Spoon the courgette and bacon mixture into the base of the tart and then pour over the egg mixture. Grate the cheese over the top and turning the oven down to 150C/300F, pop the tart into the lower part of the oven for approximately 30-35 minutes.
    5. Serve warm or cold.

    Courgettes are one of my favourite veggies and bring back many a happy memory of my first flat away from home! An odd sounding statement I'm sure, but my Grandad grew courgettes in abundance and as I was a poor, skint student I'd eat them by the free bagful!

    My sister and cousin still can't face a courgette because I put them in everything... Courgette Bolognese was a favourite!

    They are incredibly easy to grow and love the Scottish climate (seriously!) but if you don't have access to a veggie patch then you can pick up the round variety Gill has used here in Provender Brown's new fruit and veg section!
